Recipe: Suran Curry

Yams are edible starchy root vegetables that look like sweet potatoes. In India it is called Soran and is used to prepare curries and vegetables. Curry is an important part of our diet and is usually prepared for lunch. This main dish is perfect for preparing a boring lunch menu. If you're tired of the same old lunch menu, try this unique Soran curry. This delicious yum curry recipe is ready in under 30 minutes and is super easy too. This recipe consists of 2 tablespoons of oil and is therefore very healthy. Enjoy it by combining curry with chapati or rice. Please try this recipe, rate it and let us know how it went.

Ingredients:

500 gm yam
1 cup grated coconut
1/2 teaspoon turmeric
1 tablespoon tamarind paste
1/2 tablespoon red chilli powder
2 tablespoon vegetable oil
2 tablespoon coriander leaves
1 teaspoon mustard seeds
1 tablespoon powdered jaggery
1/4 tablespoon garam masala powder
salt as required
1 stalk curry leaves

Preparation:

Step 1: Fry the suran

Cut the suran or yam into cubes and place in a hot pan with 1 tablespoon of oil. Fry the potato pieces for a few minutes. When ready, put it in a bowl.

Step 2: Prepare the masala

Add 1 tablespoon oil to the same pan and heat it. Add mustard seeds, curry leaves and grated coconut and fry for a few minutes. Then add turmeric, red chili powder, tamarind paste and turmeric. Adjust salt to taste and add 1 cup water. Add the solan cubes, bring to the boil and cook for a few minutes. Then add garam masala and mix well. Cook until the dish thickens slightly.

Step 3: Decorate and serve

Serve suran curry with chopped coriander leaves. Serve with chapati or rice.
